Joanna Gaine's Lemon Pie


What I love about lemons is the rustic simplicity of it. It's light and refreshing which is perfect for summer. This recipe is simple and easy to make and it only requires a handful of ingredients.






Ingredients:


1 pack Crushed Graham Crackers

1/2 cup white sugar

6 tbsp. melted butter (unsalted)

1 can sweetened condensed milk (I used "Milkmaid" brand)

3 freshly squeezed lemon juice

3 egg yolks

2 pinch of salt

1 cup whipping cream

2 tbsp white sugar

1 tsp Vanilla extract

Lemon zest (for garnish)


Instructions:

1. Preheat oven to 180 C.

2. In a bowl, combine crushed graham, 1/2 cup white sugar. Stir in melted butter (unsalted) and mix well. Spread mixture onto the pie pan. Bake for 8 minutes.

3. While the crust is in the oven, combine condensed milk, lemon juice, egg yolks, and 2 pinch or more of the lemon zest (to add extra lemon flavor) and salt in a bowl. Beat on medium speed for 4 minutes. Pour batter into the baked crust. Bake for 10 minutes. Let pie cool on the counter for 30 minutes, and then place in the refrigerator for 1 hour to set.

4. In a bowl, combine whipping cream, 2 tbsp white sugar, and vanilla extract. Beat until lightly fluffy. Spread over Lemon Pie and garnish with Lemon zest.
